Easy pie crust for Chinese red bean buns?

I want to make Chinese sweet red bean buns from my cookbook. I have a package of koshi an but no package of pie crust. I want to pack these in my obento tomorrow and I live half an hour out of town. What is a recipe I could use that makes two 9-inch pie crusts?
